Kualitas Virgin Coconut Oil (VCO) Dengan Penambahan Minyak Daun Salam (Syzygium polyanthum(Wight) Walp)

Virgin Coconut Oil (VCO) merupakan produk yang memiliki potensi dan manfaat baik untuk dikonsumsi. Namun dalam proses penyimpanannya dapat mengalami reaksi oksidasi hidrolisis mempengaruhi kualitas VCO menjadi buruk. Penelitian ini bertujuan mengetahui pengaruh penambahan minyak atsiri daun salam terhadap (VCO). Rancangan percobaan dipakai penelitian adalah rancangan acak lengkap dengan menggunakan variasi konsentrasi sebesar 1 %, 2 % 3 %. Pengujian dilakukan yaitu kadar air, asam lemak bebas, bilangan iod, peroksida, aktivitas antioksidan pengujian mikrobiologis meliputi angka lempeng total kapang khamir. Hasil menunjukkan bahwa hasil optimal air 0,09 iod 5,57 g iod/ 100 g, peroksida 1,14 mg ek/g, bebas 0,16 69,28, 0 CFU/ ml khamir 1,67 CFU/ml.
